Happy Hour Date: The Gibson, DC
If you’ve even taken a walk down 14th street in the U street area, you most likely have walked by The Gibson. Or, as we have done, you’ve made reservations and looked helplessly around for a sign to find the place – to no avail. But when you stop expecting a grand sign – and find the right door – your cocktail life will never be the same.
The fact that a bar serves “craft cocktails” is slowly losing its appeal. It’s not that unique and creative cocktails aren’t desirable, it’s just that everyone is talking about the same thing. Everyone is making their own syrups, infusing different liquors, and creating something extra special in the kitchen. The thing that places the Gibson on a different level is how much fun their bartenders have with their creations, and the backstory that accompanies each glass.
While we might not enjoy every sip, we’ve learned to appreciate the concept and intention behind each cocktail on the menu. The Gibson’s spring menu has some real winners, but also a couple we will shy away from, even though they are stunning to look at. While the Resolve incorporates kale, we felt this vegetable was something we enjoyed more on the side. And though allspice can be overwhelming, the the Lust #1 was right up our alley with the rye whiskey and allspice dram.
Adding to our appreciation of all things Gibson The Drink I Had One Time At This Bar and A Letter From The ABM To The GOP both provided comical names and even better background stories. Just ask the bartender. And caution to those of you who shy from heat: the hellfire bitters will hit ya hard. Don’t say we didn’t warn you.
This prohibition style speakeasy is always on our shortlist when we’re in the mood for a well-crafted cocktail. Don’t know what you want? Let them know what you like and they’re always able to steer you toward something fantastic on the menu, or create something on the spot.
